I love nuts from the mall. I love the way they make the mall smell and just… yum. So I was BEYOND psyched to find this recipe on Pinterest. Originally from Detrimental Beauty, these nuts are on. point.
The recipe calls for 3 cups of almonds, and that’s a lot. I cut the recipe into 3rds for two reasons- I didn’t want to make so many nuts, but also, if this recipe bombed I didn’t just waste some expensive ass almonds. You can Google “recipe reduction” or look here or here or here for information on how to cut down a recipe (two of these sites have calculators to help you).
I was wondering if I could use different nuts, like peanuts. We’ll see if I try that next time or if I just stick to almonds. Not pictured is the 7 oz bag of almonds that I bought at the store cause I forgot, but yeah… these nuts are so damn good.

Delicious almonds similar to those you'd find in the mall during the holidays.
Ingredients
- 3 cups Almonds
- 1 1/2 cup Sugar
- 1 1/2 cup Brown Sugar
- 3 tablespoons Cinammon
- 1/8 tablespoon Salt
- 2 teaspoons Vanilla
- 1 Egg White
- 1/4 cup Water
Directions
Step 1
In a bowl, mix together sugars, cinnamon, and salt.
Set aside. | |
Step 2
In another bowl, whisk the egg white and vanilla until it’s a little frothy.
Step 3
Add the almonds to the vanilla/egg white mixture. Make sure the almonds are thoroughly coated in the egg white mixture.
Step 4
Add the cinnamon mixture to the almonds and toss until coated.
Step 5
Thoroughly spray the stoneware of your crock pot with cooking spray (Pam, Walmart brand, whatever. Add the almond mixture to the crock pot and set it to cook for 3-4 hours on low.
Be sure to STIR the almonds EVERY 20 MINUTES. (If you don't, the sugar mixture will start to get hard)
Step 6
In the last hour, add the 1/4 C. of water and stir well. This ensures a crunchy yummy coating.
**Make sure after you’ve added the water that you continue to cook the nuts for another 45min to an hour.**
Step 7
Line a baking sheet with parchment paper (I used foil paper) and spread the almonds flat to cool. The almonds will be sticky at this point, so make sure you separate them a little and have no large mounds.
**The almonds will stick together in chunks, so work really hard to separate those or when it dries, you'll have multi-almond chunks... which may or may not be a bad thing.**
Step 8
Store in an airtight container.
